Friedman's Lunch Grilled Chicken Salad Recipe

This Grilled Chicken Salad recipe was inspired by my last trip to New York city a couple years ago. As my friends and I were visiting Chelsea Market, we came across this very cute restaurant called Friedman’s Lunch which offered a variety of delicious and tasty homemade comfort food. From breakfast to lunch, that place had so many options that I could not really decide at first, but I am glad I chose this salad! Simple, fresh and tasty, this dish was a perfect score for me, and I promised myself I would recreate it at home. Here is my own take on Friedman’s Lunch Grilled Chicken Salad recipe!

Ingredients
  1. 200g chicken breasts
  2. 1 tbsp olive oil
  3. Salt and pepper
  4. 200g mixed greens
  5. 1 shredded carrot
  6. 10 cherry tomatoes
  7. 50g dried cranberries
  8. 50g walnuts
  9. 30g sugar
  10. 1tbsp butter
  11. 50g Gorgonzola cheese
  12. 2 tbsp balsamic vinegar
  13. A touch of olive oil
The chicken
  1. Cut chicken breast along the side so that you have thin slices that will cook quickly.
  2. Season with salt, pepper and 1tbsp olive oil.
  3. Grill the chicken on a griddle pan for about 4 minutes on each side or until fully cooked through.
  4. Let it rest and cool on a plate before slicing.
Candied walnuts
  1. In a heated non-stick skillet, add walnuts, butter and sugar and let it cook for 5 minutes over medium heat. Keep stirring the mix so that it does not burn or stick.
It's mixing time!
  1. In a bowl, mix greens with shredded carrot, halved cherry tomatoes and dried cranberries.
  2. Season (to taste) with balsamic vinegar, salt, pepper and just a drizzle of olive oil.
  3. Add your sliced grilled chicken and gorgonzola cheese.
  4. Finish with your crumbled candied walnuts on top and there you have it!
Notes
  1. You can eat this salad with your favorite toasted bread on the side, but trust me, this salad is also delicious on its own. Enjoy!
